Xisco Garcés. Founder & Executive Chef

A French-Majorcan Culinary Legacy

Born into a family where food was both heritage and hospitality, I grew up in Mallorca between two culinary traditions before leaving the island to train and develop my craft in some of Europe's most demanding hospitality environments. On my mother's side, generations of Majorcan women passed down a deep respect for Mediterranean cooking and local ingredients. On my father's side, a French pied-noir heritage, shaped by both classical French and North African culinary traditions, sparked an early appreciation for spices, layered flavours and culinary fusion.

These influences continue to define my cooking today, bringing together Mediterranean authenticity, French technique and a naturally cross-cultural approach to flavour. The name Juanita is a tribute to my mother, whose belief in generous hospitality, exceptional produce and food made for sharing remains at the heart of everything I do.

Training, Craft & Hospitality

Over the past two decades, I have refined these foundations in some of Europe's most demanding hospitality environments, including Hilton Hotels in Edinburgh, the five-star Hôtel Métropole in Brussels and Hôtel Le Royal in Luxembourg. This combination of heritage and professional expertise allows me to move naturally between Mediterranean, French and fusion cuisine, as well as live-fire cooking and premium barbecue experiences.

Today, I bring together family heritage, international experience and a deep respect for exceptional ingredients. Whatever the occasion, my approach remains the same: exceptional produce, technical precision and genuine hospitality at every table.
